La Vieja was born from the passion and dedication of Chef Jonay Hernández, whose dream has slowly come to life over years of creativity and culinary exploration. This project was crafted step by step, much like the dishes that emerge from our kitchen, slow-cooked to perfection.
Chef Hernández began by grounding his culinary proposal in the flavors of his childhood and his personal evolution as a chef in Mallorca. From there, he designed every detail of the restaurant, from the layout and open kitchen to the striking graffiti that adorns the walls, each element reflects his artistic vision and Canarian roots.
After countless hours of careful work, La Vieja opened its doors to the public on May 3, 2018. The menu is a harmonious blend of Jonay’s Canarian heritage and the finest Balearic products.
